Watermelon Cupcakes

Yo, ho, and Happy, Happy, Hump Day, peeps!

So yesterday, the girls and I had a pretty active go of it, and after hours, Mama worked her pregnant fanny off around the house, so frankly, today, we were all beat. And that meant taking it a little easier.

We still got a couple of errands run, and got out to grab some lunch, but we also had plenty of quality down time. And I always know our day is a winner when Chica declares, "best. day. ever." like she did this afternoon.

Of course, she was high on sugar at the time, but that's irrelevant.

But it's relevant to this post to note that the source of the sugar was a super fun round of baking these:




We started with some strawberry cake mix:



Then added in some food coloring to make it a tad darker:



Of course, Wee One came 'round to join in the fun...and beg for some taste tests:



After the cake mix was the right color, we added in our "seeds." And I'm pretty sure Chica's routine was drop in one, eat two (or three):



She started by dropping them in one at a time, but it was a little slow going, so we had to resort to tossing them in by the handful:

And had to taste test again as soon as they were out:



Alas, they weren't in total and compete sugar shock yet, so icing was next:



Mama spread the green deliciousness on top--though it would have been a fun experiment to let Chica attempt it:

Chica really did a great job helping, and they turned out pretty darn cute. (Thank heavens, as I'm sure my family can attest to the watermelon cake disaster--and ensuing poem--that still haunts my past):







Now if only I can give these away fast enough to keep them from hitting my belly within 24 hours.
